Recipe for garlic sauteed pea shoots on toast




Ingredients:

Bread (for toasting) could be anything - from rye bread to a bagel to a slice of white!

1 onion (ideally red)

1 tray of pea shoots (1 grow's worth)

Vegetable oil

3 cloves of garlic

Salt and pepper

Extra virgin olive oil to drizzle

Optional:

20g sunflower seeds


Method:

Harvest your pea shoots (ideally at around 10-14 days growing time) and roughly chop them into thirds

Roughly chop the onion and garlic

(If you’re adding seeds and want to toast them: put them in a small frying pan on a low heat, turning them occasionally, for around 4-5 minutes or until they start to brown)

Put a large frying pan on high heat and add a little oil

Add the onions, stirring them constantly until they start to brown and have started to soften

Toast your chosen bread/ bagel under the grill

Add the pea shoots and garlic to the onion in the pan. Turn the heat down to medium and saute for just 2 minutes

Place the sauteed greens on the toast and add salt, pepper and a drizzle of extra virgin olive oil to taste - and enjoy!
