It really depends WHAT you're growing. Optimal conditions and type: 6 days. Sub-optimal: 10-12. In practice most people get a crop between 7-12 days.
You should get over 150g per tray, 10 trays' worth in a MicroKit - so somewhere between 1.5kg - 2 kg of organic greens!
The simplest way is to add them to a meal once the meal is cooked, replacing a portion of veg. Or enjoy as a side salad, or stirred into soups, curries or stir frys. They're pretty versitile, but the easiest way to eat them is to incorporate them into the way you already cook and eat, which is best tried in the kitchen!
For the first 3 or 4 days: somewhere dark but ideally not cold. For the final 3 or 4 days: somewhere relatively bright. Don't worry, it doesn't have to be a really sunny windowsill, it could be a kitchen counter near a window or on a shelf in a bright room!
Even though you can use them like traditional salad leaves they're quite different. They're more delicate/fresh tasting & flavourful. And if you don't want them raw you can stir them into a soup or curry or cook with them instead.

It's one of growing microgreens strengths, there really isn't much to do. Once they're planted, which doesn't take long. Just water them when you remember and harvest when ready, that's basically it.
