Winter vegetable stew (to empty the fridge!)

Ingredients (serves 2):

1 Tray of Brassica Blend or Broccoli (1 grow's worth)

1 Onion

4 Cloves of garlic

2 Stock cubes

1 Tin of chopped tomatoes

1 Tin of green lentils (could be any bean/legume)

1 Tin of butter beans (could be any bean/legume)

*Any veg about to go out of date, we had 1/2 a bag of spinach, some cherry tomatoes, 1 courgette, and a 3 or 4 mushrooms.

Paprika, Oregano and Salt

Method:

Finely chop the onion and fry it on a high heat, with a little oil, until it starts to brown

Add the tin of chopped tomatoes, followed by the garlic cloves (roughly chopped), stock cubes and rinsed lentils and butter beans

Roughly chop each bit of veg you've got (if it needs chopping) and add to the pan as you go

Turn down to a low/medium heat, and add the herbs and spices and salt to taste

After the stew has been stewing for approx 30 mins, harvest your Brassica Blend or Broccoli, and chop them roughly into quarters

Serve and dress the delicious stew with your fresh microgreens, and enjoy!
